This is a wonderful change of pace from traditional cheesecake - and so very easy to make! The base is your favorite brownie recipe - I made a dark chocolate brownie studded with dark chocolate chips. What a way to start! The thick and chewy brownie layer is topped with a killer filling of vanilla mousse, whipped until fluffy and airy. You can create your favorite color palette - bright, bold, neon, ombre or pastel! The sky is the limit! I really wanted a fluffy and puffy top - so I didn't smash or smooth the filling down too much with an offset spatula. I think if I was using fewer colors that the filling could be swirled more, but this was EXACTLY what my girl asked for! I sprinkled with some more mini-dark chocolate chips, but you could also add sprinkles on top - you can never go wrong with sprinkles! Next time I'm going to make this with ombre shades of pink, rose and white - and top with some fresh raspberries - that could be the next killer combination! And even if you are not crazy about cheesecake (WHAT?), this is such a light, fluffy and delicious dessert - it's hard to go wrong when you have a thick and chewy brownie on the bottom!
