Fresh peaches make for a nice twist on a classic Caprese Salad - perfect for lunch or dinner! I am always amazed at how quickly this disappears when I make it - even the little ones love to eat this!
I use an aged raspberry balsamic vinegar to add just another layer of flavor - but lets face it, with fresh ripe tomatoes, peaches and creamy fresh mozzarella, you can't really go wrong. If you prefer a thicker and heartier balsamic, you can add a raspberry balsamic glaze, which really gives this a huge blast of flavor.
We've had a bumper crop of basil this summer as well, so I've been adding it to so many things!
