This is such a simple and easy Italian Herb Marinade - using bottled Italian dressing as a base, fresh ingredients are added before the meat marinades for at least an hour - but it is absolutely at its finest if you let it sit overnight before grilling.
I grilled this on non-stick grilling foil, which makes for juicier chicken (in my opinion). If you prefer darker grilling marks on your meat, oil the grill grate before placing the chicken directly on the grill.
After grilling, I placed all the chicken pieces on a serving platter and drizzled with the fresh Basil Sauce that is part of this recipe. All of my Italian herbs are growing like crazy right now, so there is an abundance of fresh basil and parsley. The taste is so fresh and it is the perfect combination with tender chicken!
These chicken breasts were super thick - make sure that when grilling you cook your chicken until the juices run clear. And remember to discard any leftover marinade! The fresh Basil Sauce will add just the right amount of herbs, flavor and sauciness to your chicken.
And as wonderful as this dinner was, the best part came the next day. There were a couple of pieces of delicious chicken leftover, and I sliced them up and topped some fresh garden greens, and drizzled with what was left of the fresh Basil Sauce. SO GOOD!
You are going to love how fast and delicious this chicken is...whether you eat it "alfresco" or not, I'll leave that up to you!
