It's hard to decide if these are more like a brownie or a cookie! These delicious dark chocolate brownie cookies are stuffed with caramel and dark chocolate chips - about as decadent as you can get!
And because one can never have enough dark fudgy brownie with infused caramel, I double load these with chocolate covered caramels so that there is caramel in every bite!
You can use your favorite chocolate caramel candies for these - but Rolos or bite-size Milky Way Caramel candies seem to hold up the best during the baking process. Once I remove these from the oven, I immediately place another candy on top, to melt into all the nooks and crannies.
If you are a fan of salted caramel, you can also sprinkle a bit of sea salt on top as well. This recipe makes 18 to 20 cookies - and they do a quick disappearing act whenever I turn around!
