Don't you just love an easy dinner that you can start in the morning, and throw on the grill or stovetop and have dinner ready in less than 30 minutes?
Everyone LOVES Chicken Fajitas here at home, and during the summertime when the peppers and tomatoes are fresh from the garden, I think we have these about every two weeks. Always a big hit!
Chipotle Lime Cream is just a wonderful twist on sour cream - chipotle chili powder, fresh cilantro and chives, and a splash of buttermilk and fresh lime juice makes for a great drizzle on top!
The secret to the great flavor is a wonderful marinade that takes these Chicken Fajitas over the top - so moist and flavorful! Brown sugar, orange juice, lime juice, soy sauce, Dijon mustard, chili powder, smoked paprika, chipotle chili powder and a few other spices combine into the most delectable marinade.
I marinade the chicken breasts for at least two hours - usually four, and they are always perfectly moist and flavorful. If you want to skip the fajitas and just have a wonderful grilled fajita-flavored chicken breast, this is the marinade that works for that as well!
Soft flour tortillas, stacked with hot Chicken Fajitas, grilled peppers and onions, a squeeze of lime juice can be topped by anything you want - shredded Mexican cheese, fresh guacamole and salsa made with fresh tomatoes from the garden - and drizzled with Chipotle Lime Cream - SO GOOD!
Also great on top of salad greens - and the Chipotle Lime Cream makes a great salad dressing as well.
