Happy New Year! And nothing screams New Year like Chinese food! I can't wait until January 28th - Chinese New Year - to share this with you! And whether you are celebrating the Year of the Rooster, or celebrating the start of 2017, you are going to LOVE these tender and delicious Chicken Egg Rolls with Sweet & Sour Sauce.
We actually enjoyed these on New Year's Day - the perfect little appetizer is also a perfect dinner when you serve it with hot rice. And this Sweet & Sour Sauce, with just a hint of fresh pineapple juice and Asian Sweet Chili Sauce, is WONDERFUL drizzled on top of white or brown rice!
These are easy enough to make ahead of time if you are serving at a party - prepare them the day before, and then just bake at 350 degrees for 10 minutes or until hot.
The delectable Sweet & Sour Sauce will have you licking your fingers as well. I also use this as a marinade and glaze - it is so good, and also easy to prepare ahead of time. You may want to just go ahead and double this recipe, as you will be loving this sauce on just about everything - egg rolls, rice, chicken, salmon, or even pork tenderloins.
The first time I made these was many years ago with my good friend Roxanne. I think we made about a hundred of these, and then split them up for different parties we were hosting.
