We LOVE this Chicken Cordon Bleu Casserole - it is a variation of the Chicken Cordon Bleu that we enjoy at Christmas, and a family favorite recipe. This was the perfect day to whip up this favorite - the delicate sauce and aromas wafting about the house while this is baking will drive you out of your mind with longing!
This is the perfect way to use up leftover roasted chicken breast and ham. The delicate sauce is so rich and creamy, and combines with the chicken and ham to bake into the most delicious dinner ever! The buttery panko crumbs are the perfect topping.
I usually end up making two of these casseroles at a time, as one is just never enough for my big crew! On weekends there are usually extra friends and family around, and someone ALWAYS asks if they can bring leftovers for lunch the next day.
I usually serve this with a nice wild rice pilaf, but you could certainly serve over white or brown rice if you prefer.
