The ripened bananas and vanilla, when combined with the buttermilk, give these a texture just a little bit like banana bread - but they are too light and fluffy - really more of the taste than the texture!
I started with a little stack of fresh, warm banana pancakes, slathered some cream filling and stacked with sliced bananas - looks good, right?
But then inspiration struck again, and I added a drizzle of chocolate ganache. Perfection!
You could also add a dollop of fresh sweetened whipped cream to the top of this magnificent stack, but I didn't think of that right at the time!
When I was making the banana pancakes, my littles wanted me to sprinkle these with mini-chocolate chips as well, but my vision was already in place.
For my crowd, they had a lot of fun building and stacking these to their own crazy specifications - which is part of the magic. The banana pancakes are fabulous all on their own - some butter slathered on top and you would have a wonderful (and lighter) breakfast treat.
If you are camping or in a hurry, you could also use instant vanilla pudding - I'll leave that up to you. If you have never made homemade Boston Cream, it really is so worth the time - the fresh and creamy texture is just so darn good!
