Last week we were at a potluck, and I brought a big batch of my Barbeque Chicken & Bacon Dip and set it alongside a crockpot of Buffalo Chicken Dip and a macaroni & cheese casserole that someone else had brought, and you know how things start to "mingle" on your plate, unless you are a little bit obsessed with your food not touching?
And suddenly I had an EUREKA moment!
Everyone goes absolutely ape over my Barbeque Chicken & Bacon Dip - and I started to put my crazy creative hat on - what if I modified it slightly to create a new twist on homemade macaroni & cheese?
Tender and juicy rotisserie chicken, oodles of bacon (can you ever have too much bacon?) and a warm and creamy cheese sauce...
And so it was born...Barbeque Chicken & Bacon Pasta & Cheese. Skipper and the kiddos were skeptical - to say the least, but when I finished whipping this up and put it in front of them, THEY WENT CRAZY!
I should have made a triple batch! We tried this two different ways...the first was a warm and creamy pasta that I served right after blending together the warm rotisserie chicken, bacon and creamy cheese sauce. If you like your macaroni and cheese on the saucy side - this is for you!
And because I had a few stragglers that weren't going to be home until later, I poured another batch into a casserole dish, and sprinkled the top with some additional caramelized bacon pieces and our favorite buttery Hawaiian Sweet Roll crumb topping. 30 minutes in the oven, and it was creamy and SO GOOD!
So there you have it. One fabulous recipe - two different way!
