Don't say that I didn't warn you! This is a salad that you will LOVE! So colorful, so flavorful - everything that makes a salad wonderful.
This is one of those salads that came about by accident - and aren't they always the best kind?
Start with Barbecue Chicken with Apricot Barbecue Sauce (or your favorite barbecued chicken). Add colorful, fresh and flavorful grilled corn, hickory-smoked bacon, black beans, bright cherry tomatoes and avocado. Isn't that a wonderful combination? But drizzle with some homemade Buttermilk Ranch Dressing and the lighted drizzle of Apricot Barbecue Sauce, and you'll have a salad that everyone will be talking about all summer!
I've shared it so many times, but we love grilling in the summertime, and grilled some extra chicken just seems like a no-brainer. But sometimes there are flavor combinations that are so perfect, that you'll be wanting this wonderful salad all year long.
Sure, you can leave out one of the ingredients, or replace it with something else, but you haven't loved a salad like you're gonna love this one. Even my avocado non-lovers (can you even imagine?) gobble this down. And grilled corn adds a pop of texture and flavor that can't be beat. If you don't have the time to grill corn or have some leftover grilled corn laying around, you can substitute a can of Niblets Corn. Skipper is not a fan of black beans, but even he loves them in this salad - and I'm always trying to get lots of protein and fresh vegies into my kiddos. And if everyone is fighting over the leftovers the next day, I know it's a homerun.
