My parents were eternal romantics! They eloped on New Years Eve, and so that night has always been a family time to celebrate!
We usually celebrate at home with family and friends, with lots of champagne, appetizers, laughter and good memories!
And for such a special night, I like to pull out all of the stops - and this Bacon Gorgonzola Almond & Pomegranate Cheese Ball is a showstopper!

This is the perfect appetizer for the holidays! Not only does it taste amazing, but it looks so festive too! The pomegranate arils almost look like jewels, don't you think?
We love the combination of savory and sweet - smoked bacon, creamy gorgonzola cheese, sweet and tart cherry-infused cranberries and roasted almonds - covered with fresh ruby-red pomegranate arils!
The combination is WONDERFUL!
For something different, or if you don't like gorgonzola cheese (which is absolutely crazy!) you can also use white cheddar, feta or goat cheese. Especially good with goat cheese - which adds a whole other layer of fabulous flavor!
In any event, once you make this you'll be make it again - it is a big crowd favorite! I like serving with sliced baguette bread, savory butter crackers, or even fresh vegies.
