So I went a little crazy with the peaches again this week....here it is Friday, and I have two crates of beautiful, ripe peaches just waiting! Our garden is on steroids this year, and we have had a bumper crop of tomatoes as well, so this is the perfect way to combine two of our summertime favorites!
Sweet, creamy, tangy and fresh - I like to grill the fresh peach slices on the grill just until they start to caramelize, but you can use skip the grilling if you want to - either way, this sweet and savory salad is sublime!
I use an aged raspberry balsamic vinegar to add just another layer of flavor - but lets face it, with fresh ripe tomatoes, peaches and creamy fresh mozzarella, you can't really go wrong. If you prefer a thicker and heartier balsamic, you can add a raspberry balsamic glaze, which really gives this a huge blast of flavor.
And the scent of fresh-picked basil is so absolutely wonderful - it's great to enjoy it fresh!
