Enjoying our favorite fresh wild Copper River King Salmon again tonight, and this incredible and totally authentic Thai Sweet Chili Sauce glaze is perfection on the deep pink salmon - just the right amount of heat, spice and sweet!
Don't let the chili peppers scare you off! The spice in jalapeno chili peppers is in the seeds and veins, so you can remove those to limit the heat. Remember to wear gloves when you are working with peppers - and never wipe your eyes!
Drizzle the fresh salmon fillets with a little olive oil and salt, grill for 10 minutes per inch of thickness. Take a cup of the Thai Sweet Chili Sauce and squeeze the juice from one fresh lime into it. Immediately after you remove the salmon from the grill, spoon half of the Thai Sweet Chili Sauce over the top.
Serve right away, and be ready for some finger-licking goodness!
