This is one of the best accidental recipes EVER!
About a month ago I was shopping, and to my delight, I discovered a new product - Birds Eye Steamfresh Barbecue Sweet Corn. Now, I love EVERYTHING barbecue, and I think I actually squealed when I saw this - before loading four bags into my cart. The next time we barbequed on the deck, I surprised my family with this NEW take on vegetables - and they completely bombed. The flavor was WAY too intense for corn, and most of it got scraped into the garbage.
This weekend I discovered the remaining bags in the freezer, and in an effort to try and save my reputation, decided to try adding a few ingredients to the frozen corn as an experiment. More about those ingredients later, but suffice it to say that the kids and Skipper were eating this stuff out of the cast iron pan the minute I put it on the table - and it was gone in a flash! They couldn't get their forks in the pan fast enough, and someone started using tortilla chips to scoop it out - and it was AMAZING!
Now, I'd like to think that everything I make is amazing, but this one was really a homerun! I don't know whether to tell you this is a great vegetable dish or a fabulous appetizer when served with tortilla chips! We love it BOTH ways!
So dang good that everyone will be BEGGING you for the recipe!
But we couldn't wait until then, so I used some fresh corn that we had just picked up from the farmer's market, added some barbeque seasoning, and made it again. PERFECTION!
Needless to say, this is a new favorite, and I'll be adding it to our summer rotation for vegetables...and/or.....appetizers! Hope that your taste buds enjoy this too!
