So big, so soft and so chewy - they are the perfect cookie! I make them for Thanksgiving and Christmas (always), but we make them at other times of the year as well.
These cookies also freeze real well - so easy enough to make ahead of the holidays and have on hand! Just remember to store these all by themselves, so that the ginger spice flavor doesn't move to your other cookies!
Many times I'll make a couple of batches, and decorate them several ways. These are the perfect cookie to have the little ones help out with - from rolling the cookie dough balls, to spreading the frosting, to adding lots of sprinkles - it's all fun memories!
