And suddenly I had an EUREKA moment!
Tender and juicy rotisserie chicken, oodles of bacon (can you ever have too much bacon?) and a warm and creamy cheese sauce...
And so it was born...Barbeque Chicken & Bacon Pasta & Cheese. Skipper and the kiddos were skeptical - to say the least, but when I finished whipping this up and put it in front of them, THEY WENT CRAZY!
And because I had a few stragglers that weren't going to be home until later, I poured another batch into a casserole dish, and sprinkled the top with some additional caramelized bacon pieces and our favorite buttery Hawaiian Sweet Roll crumb topping. 30 minutes in the oven, and it was creamy and SO GOOD!
