The kids are all pretty well trained to pack their own "go bags", so other than packing a picnic lunch or something to grill for dinner, we are usually ready and out the door in short order.
I like it that I can make these a day ahead and have them packed and ready to go the next morning. The flavor grows sweeter and more banana-ie when these have a chance to rest after baking.
Slather the bottom of one round cakey cookie with your favorite buttercream or cream cheese frosting, top with another Banana Bread Cookie, and roll the edge in mini-chocolate chips.
